If I already have 2 stereo speakers, do I have to still buy a whole home theater system?

This is more of a preference thing. If the speakers are in fine working order you can just order a receiver unit from a quality dealer and get the speakers for center and rear channels. Plus you'll be able to better match the decor and particular installation aspects of your home theater room. (In wall, in ceiling, etc)
My only recommendation would be to get a component system where the DVD, Audio Receiver, etc are all separate units.

No. Frankly, home theater systems are expensive. If you have a good pair of front speakers then save your money or get a better set of center and rear speakers. You can always upgrade and replace the front speakers in the future. Also, you know you will have good sound when playing music.
