The Epson 3490 is a flatbed scanner that has an optional business card/4x6 photo auto feeder. Do you have the optional feeder attached & plugged into the correct connecter on the back of the scanner? A 'Driver' is only the software portion to connect two hardwares. You need to install a printer driver for Printer, or a DVD driver for a DVD drive. Similarly, the scanner driver just connects the scanner to the computer.
You need to use a Scanning software to use the scanner. Canon offers CapturePerfect 3, using which you scan documents, do rotation, convert to PDF etc. CP3 has option to detect the page size. CP2 is available free of cost from Canon sites. CP3 comes with the scanner.

If you select color mode and scan grey and color pages, the output will be Grey for Grey abd color for color. If you had chosen to scan in grey mode, color will appear in Grey only.
There is an option to scan in both color and B&W simultaneously under multistream option.

go into your properties by right clicking on the icon or goto my computer, look for your printer and right click to find property setttings.. you should be able to adjust your colors from one of the tabs that appear..d
