If your oil is bubbling while returning, I would suggest checking for a air loss. be sure that your stainer cap is tight and make sure your o- ring in the pick-up tube is there and in good condition. Slow return and no bubbles, be sure the filter paper is installed correctly and clean. If your paper has been subjected to moisture or being installed without drying a wet screen, then the fibers will fuse together and restict the flow rate.

Where do you put the fryer powder when yo u filter ? Does it go in the grease before you drain it or can it go on top of the filter

After you have assembled the filtering machineprior to filtering, the powder must be spread evenly on top of the filter paper.Once you drain the oil, let it circulate on filter pan for about 5 minutes so that the powder will mix with oil before pumping it back to the fry tank. The powder helps to prolong the oil life.

You need to identify where the leak is coming.
If the leak is on the fry tank, best way to address it is to replace the oil tank.
Check the serial number of the unit with leak on fry tank, verify if it is still under warranty at PITCO web on http://www.middleby.com.
