MX 700 scans appear too small in Emails

This is a configeration issue with the appearence of the email within outlook express. It is quite normal to have this kind of appearence. The issue is in the way you present the attachment in the email. If you set it up as an attachment than you may not see the image at all, however if it is included in the body of the email, you will be able to see the image, but the image will never be full screen size as this is the way outlook express works. to get around this, set up your email through word as a full picture and email directly from word.
