Olympus D-40Zoom won't stay on 165 pics.

I can go in change my exposures to 165, but when I shut off and turn back on it goes back to 16 pics.

If you go to the menu and turn the menu option of ALL RESET from ON to OFF it should retain the image quality setting that you have selected to allow for more images to be stored on the memory card

How do you set the aperture and shutter speed independently

First, make sure you're in the manual exposure mode, not manual focus mode, as set by turning the mode dial to the "M" position.
In manual exposure mode, turning the main command dial should change the aperture, while turning the subcommand dial should change the shutter speed.
If the two command dials don't have the expected effect, reply to this post and we can troubleshoot further.

Your shutter is staying open too long. Do you have it set on "bulb" or "time exposure" or something like that? It doesn't happen on flash pics because the flash is so short, it freezes the action.

Panorama Feature on Olympus Stylus 840

Forget the in-pano function and use a free stitching program off the internet. When shooting panoramas, you need to be in aperature priority or manual mode so as to keep the exposure consistant, especially going into the sun or away from it in your pictures. Although this is good practice, it is not needed for a few stitch programs as they average out all the exposures and make the entire pic uniform. This works pretty good in all but the most demanding exposure swings.

Exposure compensation problems

The exposure compensation stays where you leave it unless you do a full reset or a custom reset, and except when you're using scene modes. But you don't need to do a reset to cancel out an exposure compensation -- simply use the exposure compensation button to adjust the compensation back to 0.0EV.

Exposure and flash problems

I assume your camera is the Olympus D520. This camera gives you very little control of the flash. The only thing available to you is the ability to change the Exposure compensation. I would experiment with raising the exposure compensation adjustment a few steps. This may or may not help. What you describe is quite common. The flash distance on small cameras is usually only about 10 to 12 feet and past that distance, it quickly falls into blackness. Some cameras have Slow Synchronizing which lets the lens stay open a bit longer past the flash. This adds light to the background. You might check the manual and see if your camera has that feature.
