The first rule in setting up a buffet table is to makesure that it can be accessed by people from at least 2 sides. Cover the table with a table cloth. Lay out the foot at different heights (raisedpie pedestals can save space and be really aesthetically pleasing!) You'll wantto put flatware at one end and plates at the other end. Voila! You have a buffet table!

What do you use to keep food on a buffet warm?

: If you are using achafing dish (the metal containers buffet food is served in) the best way tokeep it warm is by using Sterno. Sternois a safe, flammable gel that burns at a very low temperature and will stay lit(and keep your food warm) for atleast two hours. It is important to remember to leave atleast2 inches between the top of the Sterno frame and your chafing dish. This will prevent the dish from gettingburned and your food from getting too hot.

Do you need to add water in the bottom pan to use a roaster as a buffet server?

Not just no but absolutely no. This is an oven, not a steam table, and water between the roaster and the roaster cook pan actually interferes with the heat transfer, as well as building dangerous steam.

Do you have to put water in the first pan to cook a turkey?

Absolutely not. This is an oven, not a steam table, and water in the main roaster actually interferes with heat transfer. Water in the roaster cooking pan (the inside pan) actually steams the turkey, not a yummy solution.
