# Loaf only baked to about 1/3 size it shouldf have been

I used a break mix made for breadh machines, the loaf only baked to 1/3 the size it shuld have been when done. The machine is about 12 yrs old, but had very little use, Can you help me?

I have had my breadmaker for several years, probably 5 or so. Just recently it began producing loaves of bread that were sunk in the middle and not fully raised (sp?)

I had the same problem and tried using slightly less water - it worked. Also, it may be that your yeast is not very good. Larry

I would just check it around 40 minutes into the bake cycle. If it doesn't seem done let it bake another 5 minutes or so the shut the machine off.

FROM ANOTHER SITE:

Fill the bread pan with water and measure it out in cups
Less than 10 cups of water = 1 pound
11-13 cups of water = 1 1/2 pounds
More than 13 cups of water = 2 pounds

You don't need the bread pan cover unless you are making butter. If you are making bread you should always leave it off or it could melt from the heat of the baking cycle. The butter cycle doesn't use heat. Please rate this answer with testimonial/vote/rating etc Thanks!

### I have a Welbilt ABM300 machine. Have not used it for a long time- do not remember if it makes a 1 or a 1 1/2# loaf.

If your bread pan holds less than 10 cups of water your machine only bakes a 1 pound loaf. If your breadpan holds 10 cups then you hav a machine capable of making a 1 or 1.5 pound loaf. If your pan holds 12 cups of water then your machine will bake all the way up to a 2 pound loaf.

### Every time I bake a wholemeal loaf, it bakes well enough, but it tapers off to one end. This problem does not seem to occur with white bread, which rises evenly throughout the length of the loaf.

Fast Action Easy Bake yeast is supposed to help with improving the volume of a loaf, but you can add 1/4 tsp of Vitamin C powder (ascorbic acid) to whole wheat loafs to improve the rise. Sometimes mixing the flours helps as a small amount of white (30%) can make the loaf less dense. Make sure you use the best quality flour you can afford - the cheap ones don't always make such a good loaf.

Yes it does. This is just a minor problem. All bread machines have this happen. The only way around is to use the machine on the dough cycle and bake it in the oven.
