With your printer you would have had the option to load the printers menu software. While in the scanning screen in that menu it should allow you to save whatever format you want from a drop down menu. In that drop down PDF should be 1 of the options along with JPEG and others.
Scanners only see millions of dots. Unless it has software to convert a picture into a document, all documents are seen by scanners as pictures made of of millions of dots. Software is available to convert it to a Microsoft Doc format but it is very expensive.
No .Type reconiznition software is very complicated and expensive. All a scanner does is divide the sceen into millions of dots and copies those dots in Picture(JPEG) format. It's software know nothing except to copy what is there.
Ok I am not sure why ya scanner won't save in JPEG .. however converting the files to JPEG is relitively "Simple". After saving the Scanned picture.. Open it up in say MS Paint, Painshop etc, then simply choose "Save As.." from the File Menu, and save it as a NEW image file this time with a JPEG extension. IE: origional... picture.png or picture.bmp ... save as ...picture.jpg .. ya should be good to go. :)
