Can you describe the noise or post a video with sound?

I would suspect the magnetron is failing, especially since you say it doesn't happen on defrost.

At high (default) cooking power, the magnetron is on steadily. On defrost, the magnetron is not turned on as long.

It may be an arcing high voltage transformer or high voltage rectifier diode or possibly a bad magnetron.

Here are some links you or someone you know can use for test help, but read the safety warnings first:

(continuity can be good even though it is bad!)

I have a GE Spacemaker XL1800, about six years old. It heats food fine, but there is a terrible grinding sound while it does so, for the entire time it is running. This has been going on for several...

Personally, I would replace the Microwave. It is bound to be below specification by now if it has been used quite a bit.
Then you will know you will be fine for a few years.

GE XL 1800 quit heating

I don't like to pass on your problem but it sounds very much like either the high voltage supply ot the magnetron has bit the dust.
Either one would make the repair marginal at best.

This is apparently not a very good unit, many microwaves jsut kind of fade away as their magnetron emissions decay.

This one seems to have a bad rep. look at this link:

Sorry, have owned a lemon or two myself.

Microwave runs and has functional control panel, but no heat.

The controler board, or the power supply for the magnetron has probably failed, or a safety switch is not working properly. It is also possible that the controler board is in a protect mode because of a defect.

The magnetron uses very high voltage at very high current. There is a very large capacitor in the power supply for filtering the DC for the magnetron. This area of the microwave oven is very dangerous to work on. The power supply can be lethal if proper procedure is not complied to when working on it.

I strongly suggest that you do NOT attempt to service this yourself, unless you have the proper training, test instruments, tools, and service manuals to work on it.

After servicing, the tech is supposed to verify the operating power level, and do an EM (ElectroMagnetic) radiation leakage test. This is important after servicing this type of appliance.

Take the microwave oven in for an estimate. From this you can make an intelligent decision if you are going to have it serviced or replace it.

GE Profile turned off as soon as it start

If you can program it and the problem occures when you push START. Then the problem is a door switch, or the control panel not having a completed circuit. Think of your control panel as an off-on switch.COOK, the control panel switches on for 100% of the time programed. DEFROST,The control panel turns the Cook-Relay on for 30% and off for 70%, on, off, on, off,for the time you programmed for DEFROST. This is how it works. There is no lowering of the output. The output is 100% anything other than COOk is done in % of time on, % of time off. This is why you can hear a "Bump" when Defrosting. The "Bump" is the Cook-Relay sending power to the High Voltage Side, 30% on, 70% off.
