I recently ran the self-clean option on my GE Profile JK955B0F5BB. Now when I set the touch pad to 350 degrees or more, the oven heats up to beyond 500.

That is not a valid model number, the issue is most likely the thermostat has failed. The part is about 12 dollars.

The control board is bad. One of the relays has fused and you will need to replace the control board.

Older ge spacemaker range, temps wont boil water on stovetop, oven takes hours to hit 300 degrees could it be wiring or thermostat? says pn PLT135-3 owners manual [dont have] PLT059-2 model number...

Check your breakers to the oven. It sounds like one of the two of them have tripped and you are only getting 120 VAC.
Do you have a volt-ohm meter, and know how to use it?

click the link  Oven temp sensors sense the temperature is the oven cavity and the temp sensor changes resistance, this change in ohm resistance tells the oven control what temperature the oven cavity at and tells the control to shut off the element or turn it back on. The most common temp sensors used today ( *not all ) are approx 1000-1100 ohm resistance at room temperature ( 70F )
Some ohm readings and there temperature:
Degrees F    -   Resistance
            100 - 1143 ohms
             200 - 1350 ohms
             300 - 1553 ohms
             350 - 1654 ohms
             400 - 1753 ohms
