Each time I sew over a seam or any thicker part of a garment my thread keeps breaking, I have replaced the needle, the bobbin case & tried different thread but none of it makes any difference,, the fabric is a normal cotton & only 3 layers at the most
I would suggest checking for burrs on the needle plate or in the bobbin
area
when I go over a thick seam, I take the handwheel & I slowly turn the
handwheel & walk the needle over the seam slowly, that way I have a
better chance of getting over that seam.

You seem to have done everything as correctly as expected.
There are some minor things that could be disturbing yet.
Make sure that needle is exacly correct in her place and that the thread isthread from the correct side. One thing I knowworks wellwhen sewing thick parts is to hold the fabric in such a way that it is a bit streched under the needle and to let the machine go slowly over the thick bits.

The solution that I found last night was the thread tension. I have never touched the dial, only had it set on 'auto." When I started playing with it, I realized the top thread should be really easy to pull through the machine and it wasn't. I started turning the dial (to 3 or 4) and the thread slid through the machine perfectly. No more birds nest! I really thought it was bobbin initially because of the horrible sound it was making.

Tension assembly test. To do this test. Pull the thread
through the tension assembly and test it to make sure the tension is working
correctly.
(To do this test, adjust your tension setting to normal or medium or 5 or
something in the middle. Raise the presser foot and pull the thread through the
tension. It should pull easily!! Lower the presser foot and pull the thread. It
should pull noticeably harder.)
If it doesn’t work this way then you probably have a piece
of thread or lint stuck inside the tension discs. To remove it, turn the
tension to 0 zero and raise the presser foot.Using a small screwdriver, open
the space between the discs and spray with canned or compressed air. The stuff
should come out. Do the tension test again to make sure you got everything and
then try sewing again.

when this happens to me (the needle breaking) I make it a thing to do and that is to use a qtip with a bit of oil and clean the bobbin holder and then use canned air and blow out the lint from area and this may help you. You may have a tiny tiny piece of needle left in the holder and this will play havoc with any kind of sewing machine. I have suffered through it many times before I made this a practice when needle breaks

Unusual for this machine. Check to be sure the needle is inserted with the flat side to the back of the machine. If it is, remove the needle plate, bobbin and bobbin case. Turn the hand wheel slowly toward you and see if the point of the hook is above or below the eye of the needle when the hook point is aligned behind the needle. If the eye is above the point of the hook the machine is out of time and best taken to qualified technician.

Remove the needle plate and the bobbin case.
Ensure that the needle is inserted all the way up into the needle clamp.
Set the machine for straight stitch, center needle position.
Slowly turn the handwheel in the normal sewing direction and observe the following hook timing setting:
When the needle reaches it's lowest point and travels up 3.5mm, the point of the hook should be directly behind the needle, or at least within 1 or 2mm.
Another view is as the hook passes the needle, it should pass the needle slightly above the eye of the needle.
If the timing looks good, use some alcohol on a bit of cloth to clean the hook, careful around the tip of the hook as it is very sharp.
If the hook timing is off, you will need to take it to a knowledgeable service person as there are several possible solutions and several other related adjustments which will need to be made.
