This is the deal jason,get a rubber mallet,mineral oil and a mapp torch.If you look at the guage plate this is the part that the meat/cheese goes on you will see 2 rods that connect it.Heat the rods up and put on mineral oil.Hit the guage plate down while turning the knob left then hit it up and knob to the right ,keep doing this and apply plenty of oil .It will be good as new!

I can't find a listing on Hobart's website for a 300 slicer. Is there a digit missing in your description?
You could call your nearest Hobart parts place and ask them to email your specs. ASAP.
