SOURCE: Pilot light will not stay
The pilot light is basically just another burner, with its own gas supply, orifice and air intake. Because of the small flame needed, the orifice and the air intake port are extremely fine and very sensitive to pressure differentials. Since you can't change the orifice (machined into the pilot burner body) you will need to enlarge the air intake port by trial and error until the flame will become stable - it will be a lot larger than before.
BTW the correct way to convert old appliances like yours is to leave all the orifices in place as they were and install a pressure regulator on the supply line
