Moving saved game info from one profile to another
When i first got my xbox, i didnt have xbox live or anything, so i just named it (scott). when i did get xbox live, i wasnt able to use it because its so common, so i created another profile (BoneFishKilla3). eventually i started using my second profile all the time, but i had a lot of stuff on my first one that i wanted to move to my second one. when i was attempting to do this, i accidentally deleted just the name of the profile (scott). so now i have all this data in the memory unit, but its just says unknown profile, and i cant figure out how to move it or copy it or rename it. every time i try to move or copy, it just says this item cannot be transferred between profiles. is this because it doesnt have a name? how do i fix this?

You can go onto the Microsoft Xbox help website and put in your account info and you can usually retrieve the login info or you may need to call Microsoft Xbox Live support to retrieve the login info and just give them your account information.
The reason that you are not fully on xbox live after recovering your gamertag is because the gold subscription has ran out. The reason for your xbox not having your offline account is because you probably moved your account to your hard drive along with your saved games. If you cannot connect to xbox live, go buy a cat5 cable and connect it to your modem and it should connect you to xbox live so that you can download the update.
If the profile that is deleted was an Xbox live profile, then that profile can recovered through Xbox live.
However there is no way to recover anything else stored on the Xbox console that includes any offline profiles and game saves.
I have the same problem, i got my xbox 360 elite ^^ and didnt get live so this means you have to create a new account so i ended up with one offline account and one online, i think this is a problem 'cause lets ssay you got 10,000 gamer points on offline and none on online, makes you look a bit of a twit or bad player so there is a way of doing this but i think a fast and maaybe an enjoyable way of spending some times at weekends is replaying all the games then in saying that, you can buy a portable memory thing and copy everything onto that then sign onto your xbox live account and copy everything back onto your hard drive, a link for help about this problem is: http://www.xbox360forum.com/forum/game-tips-cheats-help/65220-how-do-you-move-saved-games-another-profile.html
Just copy that into your web thingy and then read it, note: the first option doesnt work but i think the second one does, never tried it myself tbh but it should

I'm not sure if you can get them at retail stores, but they are available on Ebay. Don't get the ones that state theya re for xbox live gold membership.
You can also get the xbox live starter pack which includes 3 months xbox live and a headset (that is if you can still find them, again ebay is a great starting place)

What save device are you using? memory card or hard drive?
It sounds like whatever you're using has started to malfunction. Are you able to pull up other save games?
Note that saved games are associated to a unique profile on the device, even if you're not on Xbox Live. That is, if you were logged in as profile "tools" when you saved the game you have to be logged into the same profile to load the game.
