Question about Blodgett 911-DOUBLE Gas Oven

Large yellow flame, not cooking food thoroughly

I use the Blodgett 911 in my pizzeria. Lately (with 550 degrees) the oven is burning the bottom of the pizza before cooking through. The flames used to be blue but now are showing up yellow. Black ash is appearing on the outside corners of the oven. Not sure what needs to be done. Oven is only 1 year old.

    The problem is you are not getting enough air. man I have worked on boiler and burners all my life and I can tell how to fix this but I dont know how to tell you on this forum. if you email me your phone number Ill be glad to call you and walk you thru this.

    the oven burners are creating black soot through-out the oven, we replaced the external regulator and reset the pressure to 11 in.wc. it still has tall yellow flames, this just started happening 3 weeks ago

I think ill give it a try for you. The gas lines come in thru you cutoff valve then thru you gas valve and on to the burner. right before the burner you will see a bell shape fitting. The gas line is in the center of the fitting and there will be some opening around this fitting That fitting has dust clogging it up. This is where the gas mixes with the air Turn your oven off and blow this fitting out.

  • Preheat ovens only when necessary. With conventional ovens, keep the preheating time to a minimum. Unless you're baking breads or pastries, you may not need to preheat the oven at all.
  • Food cooks more quickly and efficiently in ovens when air can circulate freely. Don't lay foils on racks. If possible, stagger pans on upper and lower racks to improve air flow.

  • Keep range-top burners and reflectors clean; they will reflect the heat better and save energy.
  • Match the size of the pan to the heating element; more heat will get to the pan and less will be lost to the surrounding air. A 6-inch pan on a 8-inch burner will waste over 40% of the energy.
  • On electric stove-tops, use only flat-bottomed pans that make full contact with the element. A warped or rounded pan will waste most of the heat.
  • When cooking with a gas range-top burner, use moderate flame settings to conserve gas. Also make sure the pilot light is burning efficiently, with a blue flame. A yellowish flame indicates an adjustment is needed because the gas is burning inefficiently.
  • Whenever possible, use a pressure cooker. By cooking food at a higher temperature and pressure, cooking time is reduced dramatically and energy use is cut by 50-75%.

    Pizza scorching on bottom

    This may sound simple but....Do you know for sure the oven temp is 550 (use a thermometer on the stone to be sure) The thermostat may be set at 550 but could be running hotter? I have had this problem in the past with ovens.

    Oven temp heats higher than set

    The control board is bad. One of the relays has fused and you will need to replace the control board.

    Blodgett 900 series it only heet on high 550 NOTHING elce no 200 300 400 just 500

    does the knob actually turn.or is the knob possibly stripped out and not adjusting.if it is turning it is probably bad

    The heating element in top unit may be loose or burned out. Push the element toward the back and see if it engages. If it is already engaged, you'll need to replace it. It is simple to remove it.Just give a firm tug and it should come right out. To replace with a new element, simply push it in firmly.
    With the bottom unit, are controls set for bake? If they are set for "broil" you are using direct heat and it will cook foods more quickly.Also, is bottom unit a convection oven? If so, foods will cook in 1/4 to 1/2 the time for a conventional oven, so you'll have to adjust your temperature down about 25-50 degrees and shorten your cooking time.

    is it a gas range?are you getting soot? you need to look at flame while unit is on, remove oven botton to expose the burner, easy!!!! 2 screws on back inside over and pull bottom up. shut door turn on range and look at flame if it is yelolow and long flames you need air ajustment at burner, inside very bottom door you will see the air shutter, open it a litttle if falmes are yellow and long and test it again.

    Always cook food in the middle of the oven. Assuming this is an electric oven, there is a heating element up there that will cause burning of food, much like a broiler works.

    If you must cook that high up in the oven, then cover the food your cooking with foil.

    Won't light up

    had the same problem, safety gas valve is sticking get a small hammer and tap saftey valve. Just bought a new saftey valve about 3 weeks ago pilot light lite but now flame. I have a blodgett oven made in the 60s. Blodgett is getting away from there swithes that they have been replacing them with a replaceable thermocouple.made by robert shaw. My supplier said that they are not on the market yet. oops! good luck from oswego ny pizza villa.
