I had a very simular problem. My fryer would do exactly as you described, but sometimes the pilot light would stay on until the burners tried to re-ignite and then it would go out.
I finally had to call the gas company. They took the pilot light apart and cleaned it. The fryer works perfect now.
Hope this helps!

Fryer cut off but pilot stays on

You could have a weak pilot or thermopile. If the thermopile is not heated correctly by the pilot, it cannot generate enough millivolts to open the gas valve. The same is true if the thermopile is faulty. Thermopiles consist of several junctions of which only some may go bad causing low millivolt output. Millivolt output with the thermostat off and pilot lit should be around 600 millivolt, you can check with a DC multimeter set on MV across the two wires coming from the thermopile. Remember, the thermopile has to be heated by the pilot thoroughly before you will get the full millivolt reading and the thermostat must be off. Cleaning the pilot assembly is often helpful, thermopiles are inexpensive and relatively easy to change. Of course, other problems can cause this issue as well, but the above are most common.

Pilot light won't stay lit after releasing when lighting gas fryer

This symptom indicates something wrong with the millivolt system. Start by checking the wires from the thermopile to the gas valve, insuring they are all tight and in place. Check the hi limit thermostat, if you have an ohm meter it should read .1 or .2 across it. With you meter set to dc millivolts, and flame present on the pilot, read across the thermocouple wires (red and white) to see the millivolts generated, with the thermostat off and the gas valve in pilot position you should get approx 600 millivolt plus minus 50. The pilot will have to be on for a minute or so to get maximum millivolts. If the millivolts are correct, hi-limit closed, and all wiring is connected, you likely have a faulty gas valve. If the hi limit reads more than .1 or .2 replace the limit, if you are not getting the millivolts from the thermopile, replace it.

Imperial IFS-40 fryer. Pilot is lit, but buriners won't come on when the temp dial is turned from off to any degree.

Sounds like your thermostat is bad? We could order you one, however in order to get you a price, I need the serial number also. These are very common fryers, our best seller by far and a good fryer too. But, things happen, and the thermostat is the most common part that is replaced after some time....
Our phone is 888-542-5959, Restaurant Equipment Outlet, Cincinnati, Ohio. We ship parts in 1-2 days, and I can get you a price in a few minutes time, if you call or email me. Thanks, Susan REO

Pilot wont stay lit on my Imperial IFS 40 deep fryer

Hello. It sounds like your wiring is shorting or crossed for sure, or your gas valve has failed, but the pilot lights, and stays on, so good sign. If you hosed the hi-limit or the thermostat, these could short internally, and cause the pilot to drop out. Try this, disconnect the wiring going to the hi-limit ( control with the 3 screws ), and the thermostat, relight the pilot with only the thermopile connected to the gas valve, turn it to on, and see, if it stays, then a wiring problem, or component problem for sure. I see I cannot get a diagram from them, maybe you can call, and have them send you one. Let me know.

Hope that helped, and thank you.

Fryer IFS 40. Burner not getting on.

If the pilot light stays lit then there is no problem with the thermocouple. What you have is a problem with the thermostat or the gas valve operator. try jumping the thermostat wires and see if the gas comes on. If so simply replace the thermostat.

Ifs40 w/ new thermopile

If the pilot shuts off within seconds of the burner, I strongly suspect you are having a problem with the hi-limit circuit. Check your wiring. The slightest unwanted grounding will cause the valve to drop out.

You also need to inspect the mounting of the bulb for the high limit. Make sure it isn't covered in debris. It should be clamped close, but not touching the heat exchanger. Grease needs to be able to flow on both sides of the bulb.

You'll need to test the switch with a meter or a jumper (for TESTING ONLY!). Remember, the hi-limit switch may be doing it's job and be the symptom, not the cause. But if the switch is tripping open prematurely, you'll need to replace it. (Part# 1177) Are you testing with enough oil in the vat?
