Unfortunately, you cannot print without using black ink on Epson, and most other, printers. Some printers allow you to use a combination of the color ink to create a "false black". But, the Epson Stylus C46 cannot do this.
Time to pick up some ink!

Unfortunately the Epson stylus needs both ink cartridges to print. I've tried useing an emty cartidge to "fool" the printer,but that won't work. When my Epson was ready for replacement I bought a printer (Lexmark) that prints with one cartridge empty.
Yes for sure If your colour ink is down there is the possibility that the print may vary in colour.As the colour ink level decreases you might have got the error to change the ink. Hence it will tend to change the printing commands. To further confirm on this you can disconnect printer, uninstall and reinstall the printer software,then connect the printer for hardware detection and installation. now do a head cleaning maintenance and a test printing. If there is still no change it will be better to replace the colour cartridge after using the menu for ink cartridge changing so as to get the ink indication correct after installation. The Epson does not like Generic Cartridges. It must be Epson Genunine Cartridges. After going thru alot of ink cartridges, finally I went back to Genuine, and it started printing fine. ! Go Figure. !!!
I have about 2 dozens cartridges. hahaha want them?
Printing black through color mixing is very expensive!
Remove the cartridges and print head.
Make a moxture of 15-20% ammonia and warm water solution.
Soak the head for an hour then completely dry it ,especially the electrical contacts.
Run a cleaning cycle and see if your nozzle check pattern improves.
If so run another clean and recheck or soak it again.
