Upholstery thread generally does not work well on a domestic sewing machine.

How do I remove the left cover on a phaff 2140. the piece that covers the tension discs.

Don't know this machine but would avoid pulling anything off as screws have a habit of pinging out and never going back. Try pulling a thicker piece of thread or fabric through the tension disks to dislodge whatever is there first

I have a new Phaff Coverlock 4.0 Serger that I cannot get the box to come up on the screen to calibrate it. There is on stitch in there that coms up, but I cannot calibrate it to make the other stit

I would suggest taking the machine back to the one you bought it from & see if they have another one that will calibrate ,,& if they don't have one ,, I suggest another sewing machine dealer..
or you can try contacting Phaff customer support by phone or email & see what they say

I am trying to sew a boat canvas top with sunbrella canvas. my top stitch is beautiful but the bottom stitch is loose and messy. Is this just a tension adjustment and if so what should I be adjusting?

Try adjusting the top tension dial to tighten up the loose stitching on the underside. Generally if you have loose threads underneath, its the top tension and visa versa.

However, if you are using a thread heavier than normal sewing thread through the needle and bobbin (which you probably need for this canvas) then the machine may struggle. I've sewed vinyl seat covers and gave up with my domestic machine and purchased a second hand industrial Singer machine 20U to cope with this heavier weight textile. Generally for anything heavier than upholstery fabric a domestic machine may not be strong enough.
