Question about Heating & Cooling

I have a gear box leak on a Duke softserve ice cream machine at one of my Dairy Queen stores. Usually when a problem arises at one of my stores I go and fix it. My Omaha store is a little over 4 hours away so I called in a professional to diagnose the problem who lives in Omaha and he said there is a leak in the gearbox he recommends replacing the gearbox. It's a little over a thousand dollars to replace. Can I get some advice on this from someone who knows a little about gear boxes. I would think maybe the seal is all it needs and I can do that?

Yes if the gear box is leaking it's a gasket or seal and can be fixed. The only way the box it's self would need to be replaced is the machined surfaces were worn.

Is there a trick to removing the shaft that turns the beater on a Taylor ice cream machine? I often have trouble removing one or the other shafts when cleaning the machine.

Most likely your alignment is off on the gear box that has the coupling attached to it, you can try to lift the box up alittle after loosening the bolts and just tighten one and recheck until it pulls out freely with no effort

Gearboxes definitely go bad. The first sign is usually noise, I would describe it as a rumbling. The best way to determine if it's the gear box is:
1. empty and disconnect machine from power.
2. remove the freezer door and beater assembly
2. remove the rear panel - 4 screws
3. Remove the belts on the noisy side
4. Spin the big pulley and listen for the noise, you may want to remove the belts on the quiet side to compare the two.
I have a video that was shot to help change the hex coupler, but you would follow all of the same steps to replace the gear box.

The most widely available ice cream mixes come in packets and are made by Rival, Hamilton Beach and Junket. Rival is the most widely available in department stores like Wal-Mart, Target and Shopko, but they may only carry the packets in the summer. They will usually be in a cardboard display box near the ice cream makers themselves. You can also buy them from various retailers on or, in the case of Junket, directly from the manufacturer. See for Junket's on-line offerings.

That said, none of these powdered mixes come in any other flavors than vanilla, chocolate and strawberry. For caramel-rippled ice cream, make the vanilla as usual. When the ice cream machine is done, scoop it into another container, alternating some caramel topping as well. Pack lighly, cover and freeze hard. For the banana, you could try adding a couple of completely mashed bananas to any of the flavors.

Do you have any recipe for milk free ice cream? For lactose intollerant diet?? Perhaps Almond Milk or Soy Milk.

Here are some of the useful steps to make a milk free ice cream.
1.) Microwave the chocolate and butter-substitute for thirty seconds in a microwave-safe bowl.
2.) Add a dash of salt, and a splash of vanilla extract to taste.
3.) Put a scoop of marshmallow fluff into the bowl and stir it in thoroughly.
4.) Remove the spoon, lick it clean, and wait up to 5 minutes for your mixture to become room temperature.
5.) Place it in the freezer for 50 minutes, remove, and if it is still not frozen well, then stir it thoroughly and place it back in the freezer for another 20 minutes.

Auger and ice holder is frozen

either your ice machine is overfilling with water and spilling into the container, oryour uni is defrosting and refreezing the ice in cintainer. run it under hot water in sink to remove and watch for it to comeback. is your ice cream frozen solid???(Dairy is good judge as to how cold your unit is and how well its workin, if ice cream is good generally your refrig is operating fine.
