With this issue if when you connect your ipod to itunes it freezes it is one of 2 issues
1) Your ipod has an error on the disk and the computer cannot read so it freezes - in this case it is a hard ware issue with the ipod and you need to get it repaired
2) Your anti- virus is trying to scan the ipod for virus and it can so rather then letting the ipod connect to your cpu it freezes the process till you disconnect the ipod -
A great test would be if you can take this to another cpu and try it if it freezes that cpu too then it is the ipod - if it works fine then it is the anti-virus you need to stop the scan and fix process.
The best thing to do wuld be to first, back up all of the stuff on your ipod, and the restore it back to factory setting through itunes. After that, you can put all of your files back on the ipod and it should function normally.
i can help you with the song part. if you plug in your ipod to your computer and it picks it up. go to tools folder options and click show hidden folders go to ipod control and then go to music and copy all of the songs to your computer!
