Please look at label on side of unit for brand, Model and Type of water heater, and include approximate age of water heater.
Add a comment with that information.
This will let me access specific information about your water heater.

I have a coleman model 7680B series 856 with a pilot light that won't stay lit

You need a themocouple, it's a cheap $10.00 part you can get at any hardware store, you have a standing pilot light furnace like mine, if your handy and safe you can put one in easy, youtube is loaded with videos on how to do it. These other answers are wrong for your unit.

Model rgdg-100auer 100,000 btu with pilot light. i light the polit that is fine turn on gas that is ok runs for 1 minute then shut all gas off and i have to relight the pilot time after time but never...

If this happens each time the blower starts, you have a crack in the heat exchanger and need to replace furnace. If the blower is not starting, it could be a high limit opening up because of the heat being generated. By pass the high limit circuit to see if it stays on and the blower works. This is only a test procedure, do not continue to run system like this. If you have a manual fan switch, turn it on and then start the heater.

Piolt not staying lit?

Most likely the problem is the thermocouple is bad and not sending required voltage back to gas valve to keep the pilot valve open. Try changing the thermocouple.
