You can't change the language unfortunately. Best bet is to focus on installing english language apps that will help you do what you want to do. For example, you can install Opera and use a tweak to have it display in english. This can replace the all Nihongo menu ridden Internet Explorer drama. You can also download an different file explorer so you won't be fighting to do simple copy/pastes. And so on and so on. I have more app suggestions in my post above and they were initially sought for that simple reason....to avoid menu drama on a Japanese Windows Mobile ROM.
