Question about Lincoln Conveyor Oven - 1133-000-A

Lincoln Impinger 2 Double Conveyor oven temperature unstable

Hi, In the last few months our 4 year old oven has started to loose temperature at random times dropping from 250c to 80c in about 10mins then rising back up to temperature. This has been happening sporasically over the last few months. At first we thought it was a gas supply issue, but have ruled out gas supply and pressure as been a cause.

Over time it has gotten worse, sometimes the temp will drop over a half an hour period before getting back up to temperature in a matter of seconds. This doesn't happen everytime it is used but every couple of weeks or so. Tonight when using it I had to close our business for the night as it was dropping temp every minute from 235c to about 176c then getting back up to temperature before dropping again. We also noticed tonight that when it went to get back up to temp we heard two clicking noises. The thermostat was replaced last week and now the technician is going to try replacing the pressure switch. He says there is no way of knowing what is causing the problem and that we have to just start replacing parts. Is this true? Unfortunately I am limited as to who I can get to fix the oven as I live in Wellington, New Zealand and there is only one company to deal with. I have already spent $700.00 with no results and now are having to shut for the night because I can't cook pizzas. Can anyone help?

It looks like a thermostat problem, but if the thermostat had already been replaced, remain to check the valve and the pressure switches.

When the valve is defective, gas will turn off and not restart, Check and eventually replace the pressure switch , but it can also be a control problem.

    First try doing the weekly cleaning procedure here, if you haven't done ir regularly , that can cause erratic temperature.

    Also give me exact model number, so that I can get exact schematics for your ovens.
    If your oven has an oven temperature sensor, that can also give similar troubles, I need exact schematics to be more specific.

    I broadly found out that in your oven, the digital display interfaces with a J type thermocouple and
    a photo
    electric sensor to measure temperature and conveyor speed.That is not just a thermostat.
    The technician should test all this part.
    The thermocouple is often cause for the problem and probably that is the part that has been already replaced.

My lincoln impinger pizza oven keeps showing LLL on temp reader after reaching its temperature,then the temperature keeps rising until it shuts off.


This error LLL on the display screen is as a result that the temparature controller is faulty or the the temparature probe is kaput

this could possibly be caused by the brushes in the conveyor motor. they might be worn out or sicking.

this is caused probably by a faulty power board or a switch. In the front all three switches share a common power source. I would start there to see if voltage is present on all three switches. These are also tied into a 24 volt control transformer it would be the next thing I check I believe it is xfrmr 3 on the print.
