Hello gaylekell,
Welcome to Fix ya

You said, you just opened your fridge a minute ago and it sounded like water or something is dripping on a hot coil at the bottom back of fridge.

It is in the auto defrost mode!
All frost free or self defrost refrigerators use this method of dispersing the water into the air as vapor.
As the water accumulates below the fridge is supposed to blow the water onto the hot coil or compressor and evaporate it away. That's why there are no more drip pans to empty!

If you do not notice any problem in the operation of your fridge
and it is not excessively loud, (Which I do not think it will be under a normal situation )
Your fridge is more than likely running normally and fine!
How old is the fridge and what's the model number?

Thank You for utilizing my advice, Huuum

A slow drip in water dispenser

This sounds like a sticking solenoid valve. When you depress the lever for you water dispenser it activates a valve, usually at the bottom back of the fridge. It might look something like this:

25380372-1h1xuof4er41rm4qkikzo3jl-4-0.jpg Sometimes they just burn out and stop working or the seal inside fails sometimes from particulates in the water. Some people put a pre-filter on the water hose that attaches to the fridge just in case. If you have a water filter inside your fridge this does not protect the solenoid. They are next to impossible to repair so a replacement is needed. Just go to Amazon or eReplacement parts and search for your fridge model number with the search terms "water dispenser solenoid". If you are mechanically inclined you can replace yourself or get an appliance tech to do it. It's a 15 minute job.

The water dispencer on my fridge is dripping. Is there a procedure to open and clean the valve?

It's the water inlet solenoid - bottom rear of fridge. Sounds crazy as you would think it's something at the dispenser, but it's not.

The dispenser only activates the open/close of the solenoid.

Having thermostat problems in my Maytag fridge/bottom freezer. Pulled the fridge out and vacuumed everything. This am the copper coil on the back outside is leaking water drop by drop. The coil is not hot/...

The copper coil on the back comes from the compressor and is what makes the fridge cold but it is filled with gas. They can condensate and drip water but this isn't usually enough to notice, or cause damage. I would actually suggest looking again to check the exact source of the water. Be aware that some water from the defrost cycle is supposed to drip into the evaporator tray at the back.

My fridge keeps dripping water and collects in the veggie drawers and underneath the drawers at the bottom. This was going on for months and now it is making an occasional knocking noise. Is it repairable...

The drain in the freezer behind back lower panel
needs opening. You can see it at the bottom of the back panel
underneath the evaporator coils. (The cold coils)
Run Hot water in the drain until it clears or use a hairdryer.
When the defrost melts the water it goes down the drain
If the drain is clogged with Ice or ? The defrost water
overflows into the ref. or freezer or on floor
Run Hot water in the drain until it clears or use a hairdryer.
Also check fan undernearh Ref in the rear
Clean condenser coils underneath

Maytag fridge has constant running water sound

you hear a constant running water sound? look in your manual under "normal operating sounds". it explains all of the sounds. it sounds like you're hearing the refrigerant going thru your evap. coil located behind the rear frzr panel. you unit goes into the defrost cycle roughly every 8hrs and water drip down into the condensate pan un the refrig.

Water was dripping in bottom back of freezer. Coil was red hot and was sizzling as water hit it. Where did water come from? Never seen this before. I actually heard the dripping sound which alerted me to...

What you observed is the automatic defrost system at work. There is a heater coil (the red hot tube you saw) that comes on at various times to melt frost off of the evaporator coil. This cycle generally lasts 25-35 minutes and then the refrig will start back up and resume its normal cycle.
The water that melted off the coils drips into a drain pan under the unit and will evaporate from the heat and air movement from the compressor. Everything you expereinced is normal and nothing to worry about. thanks Peyton...

Water dripping from top of fridge (coil housing?) under freezer.

I HAD LEFT THE DOOR AJAR ON MY KENMORE DPOUBLE DOOR WITH TOP FREEZER AND IT FROZE UP NOT ALLOWING THE WATER FROM THE NORMAL AUTOMATIC DEFROSTING PROCESS TO GO DOWN THROUGH ITS NORMAL DRAIN. THE ACCUMULATED WATER THEN DRIPPED INTO THE REFRIGERATOR UNDER THE FREEZER AND HAD TO BE SOAKED UP DAILY. THE SOLUTION--I REMOVED THE ADJUSTABLE
THATBOTTOM PLATE HAD AN UPWARD CURVED PORTION AT THE REAR. WHEN RE-MOVED, YOU COULD SEE FROZEN ICE ACROSS THE BACK UNDER THE VERTICAL COVER THAT COVERS COILS(?).
IN THE FAR BACK BOTTOM THERE WAS A FULL LENGTH, APPROX 1 1/2" WIDE DRAIN AREA WITH A HOLE IN THE CENTER THAT WAS PLUGGED WITH ICE.THAT WAS PREVENTING THE NORMAL DRAINING PROCESS.
A HAIR DRYER AND ABOUT 15 MINUTES MELTED THE PLUG, I THEN POURED A GLASS OF HOT WATER INTO THE HOLE AND IT DRAINED RIGHT DOWN LIKE IT SHOULD.
I HAD THE SAME FREEZE UP & DRIPPING PROBLEM A COUPLE YEARS AGO AND IT COST ME $100 FOR A SERVICE MAN TO FIX IT BUT IT'S REALLY A SIMPLE PROCESS TO FIX.
