Question about Refrigerators
Did you every figure out the problem with your Scotsman ice machine. I have the same machine and I think the same problem. It works well, but it never seems able to fill up and thus it runs all the time. My understanding is that it is supposed to only need to run a few hours a day once it fills up.
I believe it was the inlet water valve that needed to be replaced, but I got so fed up with the noise and repairs on this machine that I purchased a Whirlpool ice maker. So far, it's been great. It is much more quiet and produces 50 lbs of ice in 12 hours and shuts off until some of it melts. It only produces more ice about four times a day as it melts.

The problem could be a series of things beginning with ambient temperatures
too high, fan not working properly, if water cooled there could be a problem
with that also. As a technician I would first look over the condenser and make
sure air flow is proper and then attach my gauges to see the suction and
discharge pressures. I have found many restaurants that keep their ice machines
in the hot kitchen where it creates high ambient temperatures and allows grease
from the grill to collect on the condenser blocking air flow. Yes under charged
is possible or over charged but the best and most effective route is to call a Scotsman
Certified Technician. I have worked on Scotsman's and they are very tricky to
fix unless you know the process of event. If water is not pre-filtered there is
a chance that the water control valve may be stuck open allowing warm water to continue
