When i set the thermostat to desired setting flames shoot to the front of the fryer

Hi Dan.
Check if the fire tubes are clean, exhust system must be operating well during fryer operation. There should be no fresh air directed at the flue stack of the fryer, only exhaust.

To test, jump the two leads on the high limit. However, this sounds most like a faulty gas valve. Most high limits are designed to cut off both the pilot and the main buner.

The difference between Natural Gas Set Up and Propane Gas Set Up on Fryers are as follows:
Natural gas burner orifice has larger bore (#52) than Propane Gas burner orifice (#55 or #56).
Gas Valve's spring kit for natural gas has less tension (thinner) than Propane.
You have to order burner orifice ( the quantity depends on the number of burners your fryer has), pilot orifice and Gas Valve Spring Kit for Propane Gas if your fryer is set for Natural Gas or vice versa.

Pilot is on but main flame wont start up

Check first if there is sufficient gas pressure and volume for the unit as stated on its nameplate.Try to check if the thermopile receives enough heat from the pilot flame. If it does, check the thermostat setting. If the thermostat has continuity on its terminals (you can check this by using an ohm meter) when set to a higher temperature and the thermopile receives enough heat from pilot flame, you have to replace the thermopile (it may not have enough voltage to open the main valve that's why the burners do not ignite)

Lighting pilot light

Pilot assembly is located inside the bottom compartment, between the the two middle burners while the gas valve is located under the burner manifold. Make sure that the gas line where the unit is connected is open. You need to turn the gas valve knob to "Pilot" position and depress it (to allow the gas to flow on pilot) then light the pilot assembly using a lighter with extended nozzle ( burner igniter). Once the flame is present at the pilot assembly, wait for about 15 seconds (allowing thermopile to heat up) the gradually release the gas valve knob. If the pilot flame is stable, turn the gas valve knob to "ON" position and set the thermostat to desired temperature setting. This will ignite the burners and heat up the oil to set temperature. Just remember, do not do this if there is no oil on fry tank.

My commercial fryer keeps lighting up and then turns off? why?

Once the fryer is turned on, it will maintain the temperature set on its thermostat, that's why burner flame goes on and off.

I have a 40c+ss pitco fryer.the pilot will go out at random times.Could be 1hr or 24 hrs after it is lit. The gas valve has been change, and the thermalpile has been replaced.

Check if your pilot flame sufficiently heats thermopile during operation and make sure also that it is free of soot or any form of dirt, thermopile generates small amount of electricity to energize pilot and main valve of the gas valve for pilot and main burner operation. This electricity passes through hi limit mechanical contacts. Hi limit on fryers act as safety device which will shut down pilot and burner flame when oil temperature reaches 450F.
If your fryer is set at 350F and over shoots up to 450F (which will trip hi limit and shut down pilot and burner flame), the thermostat is not good, but, if hi limit trips on temperature much lower than 450F, hi limit is bad.

Fryer does not shut off when temp .is reached

I assume it is a gas model. There are 2 thermostats. One is adjustable, you set your temp, it sounds like it has gone bad.. The second thermostat is the high limit thermostat. When it reaches 450 degrees F, it will shut down the pilot and main flame to prevent a grease fire. It may be possible that someone has hooked the thermostat up wrong. Next time you fire it up, disconnect one of the thermostat wires that has the temperature knob. If the flame goes out, the thermostat is bad,
