I'm having the same exact problem you posted. If you go into the "Speaker Settings" menu on the receiver's setup (menu 2-1) does the hum stop? You don't even have to change anything, just go to that menu. It stops when I'm on the menu, but as soon as I exit the menu it comes back. I've tried disconnecting everything but the speaker wires and I can still hear the hum. I've owned the receiver since March 08 and this just started happening a week ago.

The onkyo should still have a speaker A/B selector in the menu.
Check on the back panel for speaker A/B.
If it has or you decide to use Zone 2 you will need to set the sound programme to "stereo" so the rears and centre do not work.
You can still use a digital source.
You should be able to display the amp's menu on the screen.
Hook up "monitor out" (Yellow) via RCA connector to one of the "A/V inputs" (yellow) on the tv, this will show you a display of the menu and will make it eaiser to navigate.
if what Dark_Orbit said does not work try doing a master reset by ressing and holding the dvr/vcr button and stand by button simultaneously. This would erase all your assignments so you would need to reassign all your sources hooked up to your onkyo.
if the speaker settings are deactivated, there is no other way but to reset the receiver back to factory settings. press and hold down vcr/dvr and then press standby. you will the word reset and that should activate your speaker set up again. hope this helps. ^_^
Yes it is. I have the 705. My room mate has the 605. Both AVR's will not have appreciable volume until 50 on the dial.
The dial in not linear. I don't know of anyone who has plotted the scaling of the volume control yet.
I have found much useful user info on avsforum.com. Owners post Q&A based on experiences.
Search the forum for "official onkyo TX-SR605" thread.

I found the source of my hum. I have Direct TV HD. I found that going into the menu settings (Direct tv HD Receiver) /Audio/Sound Effects and turning that option off, I was able to rid myself of the annoying hum. The option has something to do with keeping the audio settings from channel to channel, while it is changing you hear dead air except for the hum. Nice and quit now. Love this receiver!
