Have a neff t1213xo, what does black grey and brown wires stand for?

You have an hob with European three phase at 220volt mains wire connected.
You need to to disconnect from mains connection box on hob and fit conventional British brown, blue and green/yellow.
Inside the connection box you will see three live terminals,(L1,L2 & L3) there are usually some brass links to join them all up and then attach brown core to one of them. If the links are not there then you will need to fit 2.5mm links from a piece of wire.

What size cable and fuse do I need to run a Neff oven 3.68kw. and induction hob 7.2kw together ?

Divide the total load by the volts available ie. 11kw by 240v or 110v, the result is current in amps. You need a cable of a suitable cross section to transmit that amperage. There is also a distance calculation to be considered as this affects the available load. Get a sparkie to guide you as to correct sizing.

Can NEFF oven be connected using a three pin plug on an independent oven circuit

If is a bog standard single oven then yes, if it has a self clean function or a rapid heat up function then generally no as the current draw would be to high for a 13amp to cope with, if you need model specific verification ring number as per linkhttp://www.neffcustomerservice.co.uk/Neff/CustomerService.html

it has to be the temperature control itself...thats the only other component, aside from the high-heat cut out switch which rarely goes bad.

Is this oven suitable to have a Induction Hob

Provided there is a space between the top of the oven and the hob, it should present no problem.
You will of course need a seperate plug outlet for hob

Element / burner / hob is overheating on an electric oven

If three of the rings are not responding to adjustment, then I would say yes, you have faulty regulators; It is a fairly straightfoirward job to replace if you know how to access the controls

NEFF HOB

Your heater is probably equipped with a bimetal thermal switch to prevent overheating and, if it is like most made in China now, it is defective or at least highly inaccurate. If you can locate the device, using a metal shield to divert some of the heat will help it serve its original function as a safety. Look for a thick (4-5 mm), button-like device with two terminals and a diameter of 1.5-2.0 cm.

This point of failure is shared with a majority of drip coffee makers that fail way too early.
