YES, the emissions will be effected, you are driving "without" a converter. The computer was programmed to have all sensors work together so the emissions run clean. The oxygen sensors are sending signals to the pc about unclean emissions due to that converter.

Hollow rattling sound coming from car

It is very likely the exhaust system doing this, put it on a car lift and check for the noise.

Signal lights are not working

First of all have you checked the fuse? Then check the relay box for your signal relay, it is as follows.
To the left of your left foot, above the pull lever where you open your trunk. For the Flasher relay, you'll have to go behind the steering wheel column and take off that panel. Above the fuse box & to the left of the steering wheel there's a hollow rectangular box looking thing that's big enough to hold cigarettes. The hollow box has a lightbulb knob to the left of it. You can pry out the hollow box with a screwdriver to access the relay.

Power seems to run out early running through the gears and there is a hollow sound in the exhaust at the end

Hello...from your comment it sounds like your bike needs a valve adjustment. The "hollow" sound in the exhaust and the powerband loss is usually a good indication of this. Have you had them adjusted lately? This first adjustment should be done at 5000 miles and then every 7500 miles there after.
The settings are:
Intake .003 - .005
Exhaust .007 - .009
Always set valves on a COLD engine.

I hope this helps...good luck with your bike.

Looking for the best metallic switch box and accessories for cutting in a switch in hollow CMU wall.

This one does a pretty good job for mounting a switch in a hollow wall and should work fine for a CMU wall. The expanding "wings" work well in securing the box into a hollow wall. To cut the hole I would use a hammer dill with a small bit (~1/4" should do) and drill a series of holes to cut the outline and knock out the hole and use a masonry chisel to clean up the hole.
Why can't you surface mount? There are a large number of low profile boxes that do the trick and save you some time if you could get away with surface mounting.

I have a noise that sound like it is coming from my drive shaft but i am not positive its not quite a GRINDING NOISE ALMOST LIKE A HOLLOW RATTLE

check the fluid in the rear. We just replaced a rear on the same exact vehicle. Does it hum going down the road? Does the humming increase with speed? Also check the exhaust. Chrysler products are famous for their ratteling exhaust.

Will a hollowed catalytic converter cause a P0141, P0138?

If there is an O2 sensor in the cat then it will indicate an emissions imbalance and set a code.Trying to get more horsepower? You can get an exhaust cut out that flows through the cat but when you hit the switch/pull the cable it opens up the exhaust and bypasses the cat
