The heart rate monitor will tell you your CURRENT HEART RATE by continuously measuring your pulse and calculating your heart rate as it changes from second to second.
Your MAXIMUM HEART RATE is basically the fastest your heart will beat without you being in immediate danger of acute medical distress. This number is slightly different for each person and even changes from year to year generally getting lower as you get older. This MAXIMUM HR is obviously not something that every person will want to experience during their regular workout, so most people will train at an intensity level which is only a fraction of that MAXIMUM heart rate.
Your TARGET HEART RATE is where you would like your heart rate to remain during the course of each of your particular workout routines. Your TARGET HR will be different depending on what you are trying to accomplish with each workout routine.

Your particular heart rate monitor probably just estimates your MAXIMUM and your TARGET heart rates based upon what it measures as your RESTING heart rate. Your resting heart rate can obviously vary a bit from day to day depending on your activity level or mood, and there can certainly be some innaccuracies in the actual HR measurement itself.
I'm not sure of exactly which brand / model of heart rate monitor you have, so I can't say with any certainty exactly how often it measures and calculates those values or how accurate it is. Some models will actually allow you to calculate and input your own MAXIMUM HR value which then stays constant until you alter it again yourself. Others will ask you to input some variables like your age and then measure others like your resting heart rate which it figures is just the lowest heart rate it sees during a certain period of time.
If you provide the exact make and model number of your device then I may be able to find out more information about that specific model and how it measures / calculates the various values displayed.

Speaking of which, could you please double check that model number on your device.
CR-1632 sounds a lot more like the type of replacement battery it would take than the actual model number of the unit itself.

Thanks for that information. The part I need info on is the number that divides the fat burn and the fitness. You said this can change with age?? Mine changes everyday. Yesterday it was 120 and today it's 111. I understand that when my heart rate goes over this number, it goes from fat burn to fitness, but I don't understand what this number means. Is it the lower it goes the fitter i'm getting?
