Unlike most refrigerators and upright freezers, they don't use a fan motor. The condenser coils are imbedded in the walls of the machine, and need no supplemental cooling.

As to the ice buildup, sounds as if the gasket isn't sealing well enough. You could try cleaning the gasket thoroughly, and check the alignment of the lid to the body.
Appliance parts houses carry a food compatible spray, which may help make the vinyl more pliable.
If that doesn't work well enough, then the only option is replacing the whole gasket.

With the model number, check with the supply house to see if the gasket is a replaceable style.

This is normal, Jenn Air along with many manufactures use one ignition module for all the burners. So when you turn one knob on all the ignitors on top will spark but gas will only flow to the burner with the knob on.

Here is a copy paste from a Jenn Air Owners Manual, I do not have your model number so I cannot be sure this is the exact phrase in your book.

Hi, I have worked on many Hoshizaki machines. Is this model air or water cooled? If it is air cooled, check that the back of the condenser is clean for a start. 99% of the time, as this machine is making ice but not dumping it on its own, is if it has not been cleaned in awhile, will cause this problem. You need to pick up a gallon of nickel safe ice machine cleaner to run through the system in the cleaning setting. Also, the plates that the ice forms on before it goes into harvest must also be cleaned and any other water tubes you can remove by hand to run bottle brushes through them. You wouldn't think that this can cause a problem, but it is the main problem we run up against. You will notice a slime build-up on different parts also. This nickel cleaner can be purchased at a a/c refrigeration parts house or a appliance parts house. It is concentrated and you should always have it on hand. Do this, and get back to me to update me on the units operation. Good Luck,

Since I do not have the exact model number, here is the site you need to visit to get the manual. Hope this is what you are looking for.

if it seems like the evaporator is getting cold then your sealed system should appear to be ok. you need the evap fan to transfer cold air into fresh food section. if not turning u need to replace fan motor. make sure your not getting to much frost build up on the evap.
