Difference between a convection oven and a conventional oven

A convection oven is equipped with a fan to speed the circulation of heat around the food, thus cooking it faster and more evenly than conventional ovens.

Conventional ovens rely on radiant heat that rises from the bottom up to the top of the oven. Convection ovens cook foods approximately 25% faster than conventional ovens, and the oven temperature can be reduced by 25°F for most foods.

No special cookware is required. Just like conventional ovens, convection ovens can be gas- or electrically-heated. As with any major appliance, it is always best to carefully read the manufacturer's guidelines and instructions for operating the oven.

What does convection cooking mean?


A convection oven cooks food with heat; much like a conventional oven. It is faster, though, as it circulates the air around inside the cavity.

So, it's faster than a conventional oven, but slower than a microwave oven.

Conventional ovens which also microwaved at the same time, have also been manufactured.
They were also faster than a conventional oven, but slower than a microwave. But they were not the same as a convection oven as they did not circulate the air.

What is convection cookong


A convection microwave is a combination of a standard microwave oven and a convection oven. It allows food cooked in the convection microwave to be cooked quickly, yet come out browned or crisped as in a convection oven. However, most cakes cannot be baked in a microwave oven - only those without an open grain structure, such as brownies. There are microwaves which contain electric browning baking elements. A true convection microwave has a high velocity forced air fan to circulate the hot air uniformly.

My GE microwave convection oven JVM1790SK 01. It has started to make a load grinding noise, and is sparking above the cavity area, otherwise it operated properly. When I remove the fan assembly part number 80, the noise and sparks cease, and it continues to operate. What is this fan for, and how can I properly fix this?


The fan is for air circulation regulation, e.g. preventing steam (and smoke) from building up inside, and also stops air pressure from building up inside so you won't get a blast of steam coming out or worse. On the convection side it heats the food faster and more evenly. You will need to replace the fan assembly to keep the microwave safe. the noise and sparks are probably due to spent bearings and / or a dislodged fan scraping against another surface or something getting in the way of the fan
