Firstly you'll want to do some research around forums like modaco, specific sites for your phone, xda developers or similar sites to find information on how to do this for your specific phone model. The process will usually be very similar for most phones and will be as follows.Each rom will have some sort of specialty that it improves on compared to the stock one. This can be an android update that has not been released by carrier or just fixing certain bugs. For most phones there will be a small piece of software that needs to be loaded on to the phones memory so that it can install the custom rom of your liking, this is usually called the bootloader. This is usually completed with a specific program on you computer for your phone or by entering information to the command prompt on your computer. After this you will most likely only need to save the rom to your device and during startup go into that software that you installed earlier and choose the rom file from your sd card. The new software will be installed after the first boot, you will be able to load a new rom whenever you like, and you don't have to reinstall the bootloader. Just remember doing all of this will reset all settings game scores(angry birds) and apps, luckily you can back up at least all your apps with astro under the tools menu. As far as the games go i cant help you there, also if you are using adw launcher you can back up your homescreen.
