Tip & How-To about Grilling

Deep fryer maintance

To maintain the fryer you need to keep the oil clean and have the tripper to a temperature it can bear do not use any high density oil as this will need more eletricity to heat up so u need to keep this in mind and clean and strain the oil frequently as this will keep the filament in good shape and heat up the oil well making things work well for u

Why Deep Fryers pilot goes out all sudden?

There are several possible causes of this problem, aside from a loose or damaged wire, which is uncommon. The cause in about 95% of the cases is a thermopile that has gone bad. The thermopile is the small cylinder that is attached to the pilot assembly where part of the pilot flame can contact it. It has a cable or wire going to the gas valve, high limit switch, or both. When hot enough, it produces and electrical current that keep the pilot on and allows the main gas valve to open. Be sure that you have a good pilot flame. The pilot may need to be cleaned or adjusted. The thermopile is not hard to replace in most gas fryers and not too expensive. This often starts as an intermittent problem. The second possible cause is a defective high limit. The high limit is a small rectangular device with wires going to the gas valve and a tiny stainless tube that goes through the bottom of the kettle to a sensor bulb, like the thermostat has. These are usually self resetting, but may have a small red reset button. If present check the reset. If no reset, jump the two wires and see if the fryer will now light. If so, the high limit is defective, assuming the fryer is not over temperature. If defective, replace. Do not operate the fryer in this condition as there is no over temperature protection. The next cause is if the oil is too hot, in which case the high limit will shut off both the main burner and the pilot. The pilot cannot be relit until the fryer cools down and the high limit resets. If the oil is too hot, usually over 425F, replace the thermostat. If the high limit trips when the oil is in the normal operating range, replace the high limit. The final cause is a bad gas valve. This is not too common, but the gas valve is expensive and a bit difficult to replace. Check all of the other causes first.

Unless the fryer is running at 400 degrees or higher its that switch that is bad. That is a high limit and should not trip off unless the fryer gets close to the flash point of cooking oil which is in excess of 400 degrees for most oils. If I'm not mistaken the high limit is set to trip at 450. It's also a good idea to check the temperature of the oil when its working properly. It should run at 350 and its common to see the flames go off at about 360 and then come on again around 340 to maintain an average of 350. A bad high limit is a common problem.

I just need to know how to completly clean the bottom of my imperial fryer

Are you talking about the actual burners? They make a L shaped brush that you can use to get around the burners themselves, and a quick tip is to clean the fryer warm.... Once you heat up a griddle or fryer, the cleaning gets substantially easier. They also make either liquid or dry powder cleaning additives, which also help with the cleaning... Once cleaned, make sure you rinse all the soap residue out of the frypot, as that will help to quickly break down your oil, once that new oil is heated up. Another tip is to ony turn the temperature up to 325, not 350, as that also helps to break down your oil. Keep in mind, no matter what yu do, your fryer will never look clean again.... Even the clean, used ones look alittle used after some use and never look shiny new again. If you need any of the cleaning solutions, I do sell them and would be happy to ship some to you... Our individual packets of liquid Mr. Muscle cleaning solutions run $1.95 each and for a 30-40 lb fryer, you need two per cleaning. The directions says to drain oil out and rinse to clean out loose soils, fill w/'water to oil fill line, and get water boiling. You add the Mr. Muscle while filling w/water.... Boil at about 225 temperature for 10-30 minutes. (225 degrees keeps it from boiling over). While it's boiling, gently use a fryer brush or scraper to remove baked on soils. You can also buy the powder version, which is $11.95 for a 9lb jug... Fryer brushes are $24.95 and can withstand alittle of the high heat.... I stock all of these items and can ship to you, if desired. Try this anyway, whereever you end up buying your products and this should work for you...This is how we clean the dirty deep fryers we get in and we've never had any trouble. Our phone number is 888-542-5959, and we are Restaurant Equipment Outlet, Cincinnati, Ohio. We sell new/used equipment, furniture, smallwares, just about anything you need for a food service business.
Thanks, Susan

wells f49 fryer temperature problem

This is the cause of a faulty thermostat. You may also want to consider replacing the high limit as well if it has tripped more than a few times.
