Tip & How-To about Wine & Spirits

Homemade Cream Soda

Cream soda is a delicious treat, especially on a hot summer day with a scoop of vanilla ice cream on top. Its so easy to make all it takes is a little patience.

Ingredients (recipe for 500ml bottle):

  • 1/4 cup of sugar
  • 1 Tablespoon vanilla extract
  • a pinch of yeast
  • water

Using a funnel pour the the sugar, vanilla extract, yeast and water into a half liter bottle.
Shake the bottle until all the ingredients dissolve.

Then leave the bottle to sit at room temperature for up to 48 hours. You want the bottle to feel hard when you squeeze it, this means that the yeast has fermented to make the fizz. Make sure not to leave it in a hot place or left alone for longer than 48 hours because it may explode and you'll have a sticky mess!

Once its hard place the bottle in the fridge for between 24 and 48 hours to stop the fermentation and allow the yeast to settle at the bottom. Make sure not to shake the bottle up you don't want to have yeast floating in your drink.

If you find that this recipe tastes too much like yeast you can experiment with using more sugar and vanilla.

We are opening a fast food shop in Florida and need to know how many cones can you get out of one gallon of hard ice cream and one mix of soft serve ice cream. Do hot dogs sell better than hamburgers and can you serve chips or do you need to do french fries. Never had a fast food shop before. Thanks

Hi. A typical soda fountain-style ice cream scoop--a #8 food portioning scoop--holds 1/2 cup of ice cream. One gallon is equal to 16 cups, so there are 32 scoops of ice cream in a one-gallon container. Each scoop should weigh 4 ounces. A strong handed scooper can put an ice cream shop into bankruptcy so ALWAYS weigh each and every scoop.

With soft serve, one gallon of mix makes 36 - 4 ounce cones. Once again weighting the cones is key.

The hot dog vs hamburg ? depends totally on the sizes, the toppings and the type of roll used. Experiment there but start out with hot dogs to keep it simple. Regarding chips and fries, once again chips are simple with little waste, cold fries often go in the trash. Good luck. J.

Where do I find the mixes to use with Rivalgc8101

The most widely available ice cream mixes come in packets and are made by Rival, Hamilton Beach and Junket. Rival is the most widely available in department stores like Wal-Mart, Target and Shopko, but they may only carry the packets in the summer. They will usually be in a cardboard display box near the ice cream makers themselves. You can also buy them from various retailers on Amazon.com or, in the case of Junket, directly from the manufacturer. See http://www.junketdesserts.com/icecreammix.aspx for Junket's on-line offerings.

That said, none of these powdered mixes come in any other flavors than vanilla, chocolate and strawberry. For caramel-rippled ice cream, make the vanilla as usual. When the ice cream machine is done, scoop it into another container, alternating some caramel topping as well. Pack lighly, cover and freeze hard. For the banana, you could try adding a couple of completely mashed bananas to any of the flavors.
