If the water heater shuts off again unplug the white the sensor plug underneath the thermostat (The black plastic box). Then plug it back in. This sensor plug has a black and white wire going to it and it's possible the plug could have been loose going into the thermostat..
If the problem persists you will need to contact the manufacturer at 1-877-817-6750 and they can assist you.

Are you sure the pilot is heating up the thermocouple? Make sure the flame is close enough to the thermocouple. Also make sure the thermocouple is seated properly in control valve. Try unscrewing and resetting it back into place.

Replace your orfices. You probably have #40 and you will need #55. Write down the Model number, and any information from your regulator. A plumbing/heating parts supplier will help you. You may need a new regulator also.
