Contact the maker of this mystery water bottle dispenser. It sounds like it needs replacing under warranty. However.....
SOLUTION by OP: there was a hairline crack that did not show up until the plastic water bottle was inverted & the pressure /exchange between both bottle & crock caused enough "pull" to cause spillover the top of the crock. I have a secondary polycarb bottle (3gal) which is working perfectly. Simple physics, once again..

What is a water distiller?
A water distiller is a device that removes most impurities from water, through distillation. Distillation means boiling the water and then collecting the condensed steam into a clean container.
Cloudy/salty water, stuck bypass valve
water in your salt store is normall. it is commonly called brine. this is purely a cleaning agent of your water softener to regenerate the media. you do not drink this water nor does your water pass through this. it is only pulled through into the unit when regenerating.ie. this piston is in a position which allows the water to flow through a v enturie pulling the salt. water will sit in the brine tank always to be ready for the next generation and to be at the correct brine dilution so it's important to maintain the salt level above the water level. cloudy water is nirmally air bubbles which should settle out within a couple of minutes . if it tastes salty I suspect your regeneration waste water is contaminating your supply feed. like seeping back into well or tank .
