1514TIPS ON MAKING THE PERFECT ESPRESSODont just rely on your coffee maker to do allthe work. Making a good cup of coffee is an art.WATER FLOWIf youre making an espresso, make sure thewater flows through the coffee filter at thecorrect rate. If its too slow, the coffee will beover-extracted - too dark and bitter, with amottled and uneven crema on top. If it flowstoo quickly, the coffee will be under-extracted - the proper flavor wont have hadtime to develop. You can adjust the waterflow by tamping (pressing down) the coffeefirmly or by changing the grind of the coffee.THE COFFEEPre-ground coffee will only retain its flavorfor 1 week, provided it is stored in an airtight container, in a cool, dark area. Wholecoffee beans are recommended and shouldbe ground just before use. Coffee beansstored in an airtight container will keep up to 1 month before they begin to lose theirflavor. Do not store in a refrigerator freezer.THE GRIND1. If using pre-ground coffee, ensure youpurchase an espresso grind forespresso/cappuccino machines.2. If grinding your own beans the coffeemust be ground fine, but not too fine. Itcan affect the taste and the rate the waterflows through it.3. If the grind is too fine, the water will not flow through the coffee even underpressure (this grind looks like powder and feels like flour when rubbed between fingers).4.
