I ended up using the hardware raid on the EP-8K3A (ctrl-h during bootup to
configure).
It allowed me to create a RAID-1 array, and copy the contents of the main
drive to the 2nd.

Time to get your "advice" from some new friends. The 8k3a uses the on-die
thermal diode present on XP chips, so the temp reading is more accurate. See
the amdmb.com forums for more info!
