Hi. the first thing to do is eliminate the possability of piston seizure, remove the exhaust and look into the cylinder at the piston it should be clean with no visable damage, like scoring, does it feel like you have compresion? does the engine turn over with less effort than it did before, this would point to loss of compresion which would result in you not being able to start the engine up,

Low oil pressure reading

check that the oil level is not over the mark as this causes foaming of the oil and loss of pressure. At 80km/hr you will be doing around 3 grand and that will be enough to whip the excess oil into froth.. Too much oil is worse than too little oil.

I have a1989chevroletpick up 350 engine when its in idle itruns but i put it in gear it stalls i spray starting fluid in the carb it will start back up put it in gear it stalls

There are a few things that can do that. I'd check the timing (that engine likes about 8 degrees advance) Check the timing chain as well: Remove the distributor cap and turn the engine by hand. Start at 0 degrees on the timing tab. Turn in the normal rotation direction 'till the rotor starts to move, then turn backwards and measure the amount of travel before the rotor starts to move again. Anything more than 4 to 6 degrees of slack is too much.(less is better) If the chain stretched, it will throw off the cam phasing giving the carburetor a low vacuum signal and causing stalling when even slightly loaded. If bad, change the top gear (use a steel replacement) and chain. Lower gear is usually good.
Another item to check is the egr valve. If it leaks it will contaminate the intake charge and also cause problems. A partially failed ignition coil can also do that but they don't fail very frequently.

Transmission problem

If you mean a 100 mph, then that is perfectly normal. They are making engines with governors inside so a person cant try to outrun the police. Mine will get up to 100 and lose all engine power till the speed drops back down to 97. Then the engine kicks back in again.
