Sounds like you have a vacuum leak. Maybe you didn't get the rubber boot around the carb good. You can start the bike and take starting fluid and spray around the carb to see if the engine revs up. If so, then you have a vacuum leak.
I would check to make sure you have no air leaks anywhere, as in, something isn't tightened down correctly and that the air filter is in good shape. It sounds like you are running lean (too much air) Also you may want to check to make sure your hot start isn't stuck (in or out). Did you replace the gas with fresh gas? Make sure you have some seafoam or other fuel stabilizer in there to help. Start there and let us know what happens.
