My Hitachi 43FDX01B tv was sold to me as an "HD" tv. If this is true, why doesn't it have any HDMI connectors? And can at least one be installed so I can add an hd dvd player? Or is it even possible to add anything "HD" using HDMI cables?

Looking at your users manual your television is "HD-Ready" which means it will be able to display images in an high definition resolution. But because of the age of this unit HDMI was not a standard format to provide the HD signal.
You should be able to connect an HD video source to your television with the Y, Pb, Pr Component connectors. The downside to this is most standard up-scanning DVD players available will only up-scan through the HDMI connector, but you should be able to connect HD digital broadcast boxes and cable and satellite services with these connections
Regrettably there really isn't a way to install an HDMI connector on a television "after market".
