Since my '95 katana is oil cooled, what is the

Generally whatever the factory recomends. The oil isn't just used to cool your engine, it is also the lubricant and gearbox/clutch oil. Most motorcycles have a wet clutch.
Generally a 20w-50 mineral oil is good, you could use semi-synthetic oil. However you have to remember that whatever oil you use it can not contain friction modifiers or other additives as this will cause clutch slippage.

The two next best things you can do for your bike is to give it a full oil change and replace the standard oil filter with a K&N re-usuable filter. Make sure you change your oil every 5-6000 km's or every 6 months, also fit a magnetic sump plug/s if it doesn't already have them. Clean this off every time you change your oil.
If your really serious see if there is an after market oil cooler for you bike that basically allows better cooling. Also get a good screen for your cooler to protect against debris and rocks etc.
Take your bike out for long rides of over 100km because riding around town all the time allows fuel to contaminate the oil. This gives you a false oil reading over time. When you take it out for a long ride the oil heats up and burns this excess off.

there is no reason for the bike not to start after fitting a new clutch as the clutch is only used for changing gears easier.its quite possible as the right + left hand fairings have been removed the shop may have disturbed some of the electrics under tank if this was removed to gain easier access check coils and wires to both switch blocks (handlebars) the tank can be eased off without removing the whole fairing to gain access.failing that check fuses in the right hand side panel near seat.

When holding clutch and putting into first gear, completely dies

whats happening is your clutch plates are sticking together. try tightening up the clutch cable a bit. im not sure if it is cable, it may be hydraulic? if it is, then bleed the clutch to get any air out of the system. if that doesnt work, then try an oil change. sometimes old, thick oil wont let the clutch plates seperate, and you get that jerking when your engine is cold. use a light oil. maybe 5-30 or 10-30. a light oil will make it easier for the clutch to disengage.
