It is time to get your engine tuned, check the fuel, the timing and the tuning settings.
there can be a reason that the tuning of the fuel/timing of engine can cause this power diffference.

Check and confirm.

When shifting from 4th gear into overdrive, power is lost and it feels as though there's no gas being supplied. Can only drive in 4th gear, no higher.

At what speed are you shifting to overdrive? If it is below highway speed, then you are lugging the engine

The transmission feels like its not wantin to grap any gears but the tranny fluid is fine

the tranny fluid really has nothing to do with if it dont smell burnt that dont mean anything either you can try a simple test your self its called power braking step hard on the brake and while in forward gear give it a lil gas and increase slowly if you feel the tranny slipping its a good idea to take it to a shop but do your homework trannys are alot of money to fix take it from a mechanic like me.

Just bought a 1985 300zx ,what is the power on/off button for by the shifter

It is for shift timing for the transmission.

Off, or ECON(omy) on some models is faster shifting, to get you into a higher gear sooner, returning (hopefully) better gas mileage.

Power, or PWR on some models, is delayed shifting, holds the gears for longer amount of time to provide more acceleration per gear before shifting.

It is helpful for towing and making the car feel a little more sporty.

Feels first gear doesn't engage from stop

About the only thing you yourself can do is to check your transmission fluid level, and replace if necessary.
Sadly you will probably need to take the car into a service center to be tested properly.

Sounds like a vacuum leak problem or maybe fuel pump/filter.

5th. Gear

Sounds like you may have bent a shift fork or your cluster gear has some missing teeth on it now. I would venture to say that is it a bent shift fork. This will require the transmission be removed to gain access to inspect and repair.

Un usual rpm spikes

At a guess.... Your clutch is slipping. Higher gears and increased drag at hiway speeds put the most torque through the clutch and it sounds like that's when the plates start to slip. When you back off the plates grab again until the load over powers the plates again. But that's just a inter-guess through a computer screen...... ,,
