The rocker cover gaskets, they shrink up over time and leak, usually the rear drivers side on a V6 or V8 is the first spot. You can try tightening them up and stopping the leak, it is the cheapest route to take, but you will probably have to replace the cover gaskets, they do not come off easily. You have to remove the intake, most of the time. Then pull the covers, replace the spark plug seals, then the rocker cover gaskets, put it all back.Use no sealer to put them back on. No more leak. Hope this helps.

Why would I see coolant leaking from a motor mount bolt

Probably the coolant is leaking from somewhere higher on the engine than the motor mount, and it is running to the lowest point before dripping off. It could be a leak from the head gasket area, or possibly from the front of the engine and the cooling fan is blowing it back. Another possibility is that one of the core plugs (or freeze plugs) is leaking and must be replaced. The worst possibility is that the engine block is cracked.
With the engine off, get under the vehicle with a strong light and check the area above the motor mount closely. If the coolant has been leaking for a while, you should see a nice clean path where it has been running down, possibly with whitish lines along the edge. Trace it back to where it comes from, and you will know what has to be repaired to stop it.

I have a 2000 Honda Civic. The driver side motor mount has separated from the block. where the mounting bracket meets the engine inside of the plastic timing belt case, one of the bolts has sheered off...

The old tried and true method of a small jack under the oil pan with a block of wood between them, so the pan won't get dented. With the mounting bracket out of the way, you can raise the engine a bit to make the area more accessible.

I have taken the oil pan bolts out and there is not enough clearance to remove the pan on a 2002 Buick Regal 3800 to replace the gasket. What steps do you suggest next.

Did you remove the catalytic converter, and motor mount? Lots of stuff has to come off to get this pan out. :o(
