I have a 2005 Ford Freestyle SEL AWD overheating when driving and not when idiling

Are you sure you have all the air out of the cooling system? Have you had the system tested with a gas analyzer for a leaking head gasket? I would go with the head gasket.

Why is fuel leaking in the area of the oil filter?

If you have fuel & gas mixing together the only way that's possible is the cylinder head or engine block are cracked or the gasket is faulty. Runs rough? Hard start? Black smoke from tailpipe? Check for those black plugs & GET A COMPRESSION TEST ASAP!!!!!!!!!!! Good luck Frank M

Engine overheating 2-3 miles down the road. Heater fails when gauge gets to high. Replaced thermostat. Idiling is fine.

Sounds like possible head gasket failure. Is it pushing antifreeze out through the over flow bottle? When it pushes out enough fluid the heater will not heat. A easy check if head gasket is to fill radiator and leave cap off and start motor. It will blow the coolant out wile running. I wish you luck. Have a good day.

I'm needing to add coolant frequently, what may be the issue?

With a vehicle that old, it's either a blown head gasket, or leaky coolant hoses.

Lost water, overheated, water is pouring out bottom when trying to start. engine won't start

You need to first identify and repair the source of the water leak before trying to run the motor.
It may only be a failed coolant hose.
If the motor has been severely overheated it may (among other possible heat related problems) have a warped head or blown head gasket.
To get it started, do the requisite checks for presence of fuel & spark.
When running:-
Check for water in the engine oil,
Check for engine combustion gas bubbles in the coolant resevoir - this indicates leaking head gasket.
