Put your bike on the high stand and thn check the oil level at the right handside cover just above the brake pedal. It should be fully covered with oil.
The standard capacity of oil for is around 2.5litres without the oil cooler and if with oil cooler (the one tht frm XJ650) the oil capacity is thn 3.8 litres.

The Maxim-X didn't come with an oil cooler so it'll be the lesser oil volume. And the sight glass should NOT be entirely covered. The maximum oil level is marked by a line just below the top of the sight glass. Don't fill in 2.5L all at once. Add a little at a time and allow the oil to settle into the crankcase before checking the level in the sight glass.

SOURCE: 1985 Yamaha XJ700 Maxim won't work

All engines need the same three to four things to work correctly..
Compression, Fuel, Spark, (timing).... But, usually those bikes, have fuel issues. The fuel tank spigot has a vacuum controlled valve which when the engine is cranked, suction is applied and fuel then can flow. Second,, the needle and float in the carb tend to get gummed up along with the main and idle jet... You need to make sure the carb is maticulously clean, Using carb cleaner, and tag wire,, or a piece of fine wire ( be careful not to enlarge the tiny holes). Keep refering to the 3-4 list fuel, compression, Spark,,,timing.....
Good luck...!!

SOURCE: 1985 Yamaha xj700 Maxim- Carb. fuel lines

yes, the breather line hooks to the petcock on the line facing the back, the fuel line hooks to the larger one. the line from the breather is actually a vacume line that turns on the fuel, without it you will not get fuel out of the petcock unless it is in the prime position.

SOURCE: Carburetor on yamaha xj700 maxim x

Actually, they're not Hitachi carbs. Since you have a 1985 "Maxim-X", the model number is actually XJ700XN. The XJ700 does indeed have Hitachi carbs but your bike, the XJ700XN Maxim-X has BS33 Mikuni carbs.

Careful with the model number, the XJ700 and the XJ700X are entirely different bikes.

the Yamaha xj700 maxim x (1985) DOES have an oil filter. it is on the front of the bike, about as far down as you can get. it's held on with one bolt.
