I'm not familiar with this exact bike, but all others I've seen have two wires going to the switch. You would simply connect the two to close the circuit thus bypassing the switch. For the record this is not a good idea.(Had to say it.) :)

Stalls when I put it in gear

Not sure what kind of bike you have street, dirt. I have a Gsxr 1000 and had this problem. What was causing mine to die was the kick stand was not making contact with the kill switch. Had to adjust and tighten the kick stand. The lower kill switch can pick up road grime and stop working also. For a quick check you can pull the wires off the switch and depending what type of switch the wires either need to be tied together or seperated. If the switch is gunked up this will also help give you more spark leads to more power..

1100vstar cuts out when I put it in gear

if your bike is equipped with a kick stand kill switch it will kill the bike when put into gear if it is still down, sometimes the sensor or wires can go bad and make it think the kick stand is still down even if it is up, another think to check is your clutch adjustment

My bike starts no problem drives great but when i stop the bike and turn it of it wont start ihave to jump it in gear and of she goesits a 00 125 intruder lc its been sitting up for 4years veeery clean...

Sounds like the cut out switch on the kick stand. The bike shouldn't start if you have the kick stand down. Check the kick stand is fully retracted and that the switch is disengaging OK. Maybe the stand is slightly loose & its making contact even when retracted. Otherwise check the kill switch. Both parts are available cheaply on ebay & easy to replace.

Engine shuts down when put into gear, with kickstand up occasionally, and when i get on it hard it sputters all the time.

sounds like you have a short in the kick stand kill switch. first cheack the spring holding the kick stand, if the spring cant pull up the kick stand enough to keep that button compressed it will kill the engine. if thats not it take the safety switch off and make sure the button can slide freely in the unit.
