A service manual is a valuable tool with an aging bike. I suggest the dealer/mfr. or Clymer books. In the meantime, go to the library reference section...646 stacks should have what you need.

Where is the oil filter on my 02' ZRX1200R, and how do I replace it?

You could try;
Get the right oil filter for the bike. Put it up to the different plates on the engine, Problably the right side. The plate would be a larger than the filter, but not to much larger. Take the plate off, and see if there's a filter there. Just replace it. The are problably arrows than indicate the filter direction. Be sure to look for, and replace the o-ring.

How to take baffles out of standard exhaust?

Inadvisable. The stock exhaust system and the engine jetting / calibration are balanced for the best"compromise" performance. Removing the baffles will change the exhaust pressures and upset things. It may sound more powerful because it will generate more noise but that's all. If you want a better sound AND better performance change the complete exhaust system and have the induction system matched to the new pipes.

It seems I need to change my drive chain for a 1200 ZRX kawa... Since it has a high torque engine, which brand/kind do you recommend?

Just visit a Kawasaki dealer and get the stock chain the bike came with. The designers of the bike carefully determine what chain will best handle what the engine can put out . I never try to out-engineer the engineers.

Exhaust system

radiator has to be removed then its just a simple job of undoing the header nuts and the silencer bolts, exhaust should be free to come off.
