The obvious answer is to check the timing marks on the cam and crank pulleys. If they don't line up correctly it's jumped a tooth. Symptoms are that it will idle roughly and not run smoothly. You fuel consumption will be worse and it will be more difficult to start.

It would crank erratically and not smoothly . Possible backfiring and kicking back against the starter .

2000. Nisan maxima is it a interference motor when it jumps timing

the maxima engine has been identified as an intereference engine and valve damage is most likely to occur ( autodata timing belts publication)
timing is unlikely to jump unless the belt breaks or the belt tensioner becomes loose
if there is a timing problem then the engine will be difficult to start , or run very badly
If the motor starts and runs but lacks power or performance or just does not start then it is suggested to have the fault codes read to check for cam/crank position sensors and immobiliser operation

Is there a way to check the timing chain without removing the cover ( this is quite a job) for a look at the timing marks

no way of doing so. need to remove cover. i have been doing this since 1996 and have never seen chain driven nissan jump timing. have seen some timing belt cars jump, but never chain driven engines. i think you have something else going on. i have done many and many timing chain jobs on frontiers and maximas, but not for a timing chain jumping issue. upper timing chain shoes wear out and engine gets noisy. i have to say i have seen some with the primary chain stretched a bit, but car still ran fine.

Why would 07 maxima work fine then die while going down highway and not start again?

fuel pump /timing belt /computer fault /sensor fault/ to be honest would need my head under the bonnet to have any idea

My nissan maxima will not start

Check timing belt. Shoot a timing light down at your crank. If the timing mark jumps around bad, your belt has slipped.
